To create something exceptional, your mindset must be relentlessly focused on the smallest detail.

I'd been admiring the work of former Echuca local Beth Morrison for a long time. I thought our first birthday would be the perfect time to approach Beth to create a short film for The Sweet Meadow.

I gave her a pretty vague brief - I just wanted her to produce a film that felt like viewers were "peeking over our shoulders". I wanted people to see the finer details that all come together to deliver a Sweet Meadow experience.

I think she nailed it. I'm so glad I had the opportunity to work with Beth now before she gets way too famous for me and I can't afford her! Check out more of her work here

When food scraps are sent to landfill, they decompose to produce methane, a greenhouse gas with more than 25 times the global warming capacity of carbon dioxide.

If we recycle our food waste instead, the valuable organic matter and nutrients contained within them can be recaptured. Adding scraps to compost, feeding them to animals such as poultry, or adding them to worm farms are all ways we can reduce the amount of food we throw away into landfill.

Watch the video below for ways in which The Sweet Meadow is reducing our waste footprint.

Mango Sorbet Sandwich, a dessert that will feature on our summer menu.

So we're about a month overdue but better late than never! Rather than a complete overhaul of our current menu, we are instead tweaking ingredients, prices and flavours to better suit a summer cuisine. Think lots of stone fruit, zucchinis, fresh herbs, tomatoes and sorbets.

Check out the video below for a look into some of the places where we source our produce. The new menu can be viewed here
